Resumo(s)Atualmente é reconhecida a importância da alimentação para o desenvolvimento global das crianças e para a diminuição da probabilidade do desenvolvimento de diversas doenças na idade adulta, ainda assim, as doenças relacionadas com práticas alimentares insanas, constituindo exemplo as doenças cardiovasculares, continuam a ser a primeira causa de morte no mundo ocidental e em Portugal. Embora ao longo dos anos se tenham realizado imprescindíveis avanços relativamente aos conhecimentos científicos acerca da nutrição, estes não obtiveram efeitos relevantes ao nível dos comportamentos alimentares das populações. Da mesma forma, embora a escola possua recomendações para a promoção de hábitos alimentares saudáveis, diversos estudos demonstram que as crianças e jovens continuam a ter uma alimentação indesejável, responsabilidade que atribuem à superficialidade com que este tema é tratado na escola. De acordo com o exposto, na investigação associada à intervenção pedagógica realizada com alunos do 1º e 6º anos de escolaridade na temática da “Alimentação” foram realizados dois estudos com o objetivo global de determinar a eficácia de uma intervenção pedagógica orientada para a mudança concetual na promoção de conhecimentos, intenções e comportamentos favoráveis a uma alimentação saudável. O primeiro estudo teve como objetivos específicos determinar os conhecimentos dos alunos sobre “Alimentação Saudável” e analisar as intenções relativas à adoção de uma alimentação sã. O segundo teve como objetivo analisar o valor nutritivo dos lanches que as crianças trouxeram para a escola. Para a consecução destes objetivos recorreu-se à implementação de questionários, antes e após a intervenção, nos quais se testaram os conhecimentos sobre a temática em estudo e se analisaram as intenções relativas à adoção de uma alimentação saudável. Recorreu-se à análise dos alimentos e à classificação dos lanches em Desejáveis (D), Aceitáveis (A) e Não Desejáveis (ND), antes e após ser aplicada a intervenção. Os resultados obtidos refletem uma evolução positiva em ambas as turmas ao nível dos conhecimentos sobre o tema “Alimentação” e das intenções futuras relativamente à prática de uma alimentação saudável. Os resultados referentes à análise dos alimentos e à classificação dos lanches revelam o impacte positivo da intervenção, na medida em que se verificou em ambos os ciclos o aumento da prevalência de alimentos e lanches Desejáveis (D) e a diminuição da incidência de alimentos e lanches Não Desejáveis (ND).
Although nowadays we know of the importance that nutrition has on the global development of children and on decreasing the likelihood of developing several diseases, health problems (such as cardiovascular diseases) related to unhealthy eating habits remain the leading cause of death in Portugal and in the Western World. Taking this into account, we can verify that although our scientific knowledge on nutrition has been growing, this knowledge didn't have any relevant impact on the population's eating habits. Similarly, schools give out recommendations for the promotion of healthy eating habits, but several studies show that children and teenagers keep their unhealthy eating habits, and they point at the superficiality with which the theme "Nutrition" is treated in school as a big factor. According to the above, in the research associated with the educational intervention, carried out with students of the 1st and 6th grades in the theme of "Nutrition", there were carried out two studies with the overall goal of determining the effectiveness of an educational intervention oriented towards a conceptual change in the promotion of knowledge, intentions and behaviours favourable to a healthy diet. The first study's objectives were to determine students' knowledge on "Healthy Eating" and analyse the intentions concerning the adoption of a healthy diet. The second was to analyse the nutritional value of the snacks that children brought to school. To achieve these objectives we made questionnaires before and after the intervention, in order to test the knowledge of the subject being studied, and to analyse the intentions towards adopting a healthy diet. We analysed the food and classified the snacks as being in one of three categories: Desirable (D), Acceptable (A), and Undesirable (ND), both before and after the intervention. The obtained results reflect a positive evolution, in both groups, on their knowledge on the topic of "Nutrition", and on their intentions regarding the practice of healthy eating. The results of the analysis of the food and of the classification of snacks show the positive effect of the intervention, as it was verified in both groups the increased prevalence of Desirable (D) food and snacks and a reduced incidence of undesirable (ND) food and snacks.
