Smell has been one of the least studied senses and one of the most mysterious for centuries. Thus, since ancient times mankind has tried to isolate, characterize, and reproduce the olfactory profiles that nature offers. Thus, techniques and procedures for the extraction of chemical substances that have been invented centuries ago have been optimized over time. With the development of new techniques, tools and new concepts, the scientific community has increased its interest in the development of new chords, new families and molecules that are obtained synthetically. In the 21st century, the perfume industry is evolving towards greener, more eco-sustainable and durable processes, with the concept of green chemistry, artificial intelligence, and the analysis of consumer insights in a target market that allow the development of new products.
