Producing micro and nano fibers having high water holding capacity from tomato and wheat waste products and using them in model foods
Koçak, Gönül; Mert, Behiç; Department of Food Engineering (2010)
The main objective of this study was to investigate the fibers and their effects and availability in ketchup (tomato fiber) and cake (wheat bran fiber) production. In order to this, rheological properties of ketchups with tomato fiber, and cake (100, 80, 60 g flour formulations) with wheat bran fiber in different concentrations were investigated. Tomato powder in ketchup and wheat bran in cake was used for comparison. The samples studied had pseudoplastic behavior having a definite yield stress with a good ...
Development of analysis methods for cry1ac and sam-k gene lines in tomato using pcr and real-time pcr
Uygun, Sahra; Gültekin, Güzin Candan; Department of Biotechnology (2010)
Genetically modified organisms are entering the human diet in all over the world. In order to have transparency in the foods that are being consumed, there is a need to trace the genetically modified organisms (GMOs) in the market and consequently this need brings the necessity of analytical methods that are capable of detecting, identifying and quantifying the transgenic events. These analytical methods also form the basis of the labeling regulations that are tried to be formed regarding GMOs. The main aim...
Microwave assisted extraction of phenolic compounds from tomato and sour cherry pomaces
Şimşek, Meriç; Şümnü, Servet Gülüm; Department of Food Engineering (2010)
The objective of this study was to compare microwave assisted extraction (MAE) and conventional extraction methods for the extraction of total phenolic compounds (TPC) from tomato and sour cherry pomace. Antiradical efficiency (AE) of the extracts and also the concentration of phenolic compounds were determined. In MAE, the effects of microwave power (400 and 700 W), solvent type (water, ethanol and ethanol-water mixture at 1:1 v/v), extraction time (8-20 min) and solvent to solid ratio (10, 20 and 30 ml/g)...
