Resumo: As vantagens de se utilizar frutas em produtos do tipo confectionery são as possíveis substituições de aromas e corantes artificiais por aqueles provindos das frutas, o que qualifica o produto como mais natural, além da presença de compostos funcionais presentes nas frutas, como vitaminas, compostos fenólicos e fibras. O açaí (Euterpe oleracea Martius) é uma fruta típica da Amazônia, com grande importância econômica no Brasil, especialmente no estado do Pará. É altamente energética (alto teor de gordura) e rica em compostos antioxidantes. Foi desenvolvido um chocolate branco com adição de polpa de açaí, com o objetivo de obter um produto mais nutritivo e sensorialmente agradável, e foram estudadas as influências de uma variável de ingrediente (tipo de açaí desidratado) e outra de processo (diferentes tempos de conchagem) sobre as características sensoriais destes produtos. Para obter os resultados, foram produzidos em planta piloto seis chocolates distintos, sendo que três continham açaí atomizado e três continham açaí liofilizado, e que foram conchados durante três tempos diferentes (6,12 e 18 horas). Os chocolates obtidos foram submetidos à Análise Descritiva Quantitativa (ADQ) e teste de aceitação pelos consumidores. Os resultados da ADQ indicaram que os chocolates elaborados com açaí liofilizado mantiveram maior intensidade das características do fruto (cor roxa, aroma e sabor de açaí) e nos com açaí atomizado houve predominância das características sensoriais do chocolate branco (gosto doce, aroma adocicado, aroma e sabor de manteiga de cacau e sabor de leite em pó). Os tempos de conchagem não tiveram impacto sobre aparência, aroma e sabor dos chocolates, mas tiveram sobre textura dos chocolates, especialmente dureza e derretimento, onde os chocolates liofilizados conchados por mais tempo, 12 e 18 horas, foram considerados mais macios e cremosos. Os resultados do teste de aceitação, realizados com 118 consumidores, demonstraram que os chocolates com açaí liofilizado tiveram maior aceitação pelos consumidores para os atributos aparência, aroma e textura. Para o sabor e impressão global, os consumidores não demonstraram diferença de aceitação entre chocolates com açaí liofilizado ou atomizado. Utilizando o Mapa de Preferência externo, foi possível observar que houve segmentação da aceitação dos consumidores, já que um grupo pareceu gostar mais das características dos chocolates com açaí liofilizado e outro demonstrou maior aceitação para os chocolates com açaí atomizado. As amostras de chocolate com açaí liofilizado conchadas por mais tempo (12 e 18 horas), que são as amostras que passaram pela fase seca da conchagem, tiveram maior aceitação pelos consumidores que a conchada por 6 horas, que não passou pela fase seca

Abstract: The advantages of using fruits in confectionery products are the possible substitutions of artificial flavors and colorants for those from fruits, which qualifies the product as more natural. Still within this claim of natural, one can point out the presence of bioactive and functional compounds present in several fruits, such as vitamins and phenolic compounds, as well as fibers. Açaí (Euterpe oleracea Martius) is a fruit typical of the Amazon, with great occurrence and economic importance in Brazil, especially in the state of Pará. It is a highly energetic fruit, due to its high fat content, besides being a source of anthocyanins and other antioxidant compounds. It was developed a white chocolate with the addition of dehydrated açaí pulp in order to obtain a more nutritionally beneficial and sensorially interesting product. In addition, the influence of an ingredient variable and a process variable on the sensorial profile of these products was studied. In relation to the ingredient, the effects of the use of different types of dehydrated açai were compared, and the effect of different conching times (one of the stages of chocolate production) was also investigated. In order to achieve that, six different types of chocolate were produced, three of which contained spray-dried açaí and the other three contained freeze-dried açaí, and were conched during three different times (6,12 and 18 hours). The obtained chocolates were submitted to Quantitative Descriptive Analysis (QDA) and consumer acceptance test. The results of the QDA indicated that the chocolates elaborated with freeze-dried açaí maintained a greater intensity of the fruit¿s characteristics (purple color, aroma and açaí flavor), and in those made with spray-dried açaí there was predominance of the sensory characteristics of white chocolate (sweet taste and aroma, cocoa butter aroma and flavor, and milk powder flavor). Conching times had no significative impact on the appearance, aroma and taste of the chocolates, but had on the chocolates texture, specially the hardness and melting, where the freeze-dried chocolates conched for 12 and 18 hours were considered softer and creamier than the chocolate conched for 6 hours. The results of the acceptance test, performed with 118 consumers, showed that freeze-dried açaí chocolates were more widely accepted by consumers for the appearance, aroma and texture attributes. For the taste and overall impression, consumers showed no difference in acceptance between freeze-dried and spray-dried açaí chocolates. Using the External Preference Map, it was possible to observe that there was a segmentation of consumer¿s acceptance, since one group seemed to like more the characteristics of freeze-fried açaí chocolates, while another group showed greater acceptance for the chocolates with spray-dried açaí. The freeze-dried açaí chocolates conched for 12 and 18 hours, which were the samples that passed through the conching dry phase, were more accepted by consumers than the conched for 6 hours, that did not pass through the dry phase
