Extraction and analysis of ellagic acid and ellagitannins from various food sources

Ellagic acid is a powerful bioactive polyphenolic compound showing a wide range of biological activities and potential beneficial effects on human health. An increasing attention to this phytochemical has led to the development of numerous techniques for its extraction and analysis. In view of a diversity of natural sources of ellagic acid and its derivatives, techniques that have been optimized and applied for their extraction, detection, and quantification are presented herein. Ellagic acid can be found in natural products in three different forms. While the free form of ellagic acid is rarely found, ellagic acid glycosides and ellagic acid linked as ellagitannin, in which hexahydroxydiphenic acid forms esters with a sugar, are abundant. This review offers an overview of the main food sources of ellagic acid, its glycosides and ellagitannins. Presently, the main sources of these compounds are some seeds, nuts and fruits. High levels are found in oak trees, walnuts and chestnut trees,... pecans, pomegranates and different berries, such as raspberries, strawberries, blackberries, and cranberries. The attention is also given to other types of plant foods presenting alternative dietary sources of ellagic acid, its glycosides and ellagitannins including processed products. © 2016 Nova Science Publishers, Inc.
