La mejora de la calidad de productos libres de gluten es uno de los retos actuales del
sector alimentario debido a la demanda generada por la población celíaca y la tendencia
de un sector de la población por evitar alimentos con gluten en su dieta como estrategia
para mejorar la salud. El gluten está formado por dos fracciones de proteínas diferentes,
gliadinas y glutelinas, que confieren cohesividad y propiedades viscoelásticas a las masas.
En el presente trabajo se estudió el efecto que ejerce la sustitución de harina de trigo sobre
las propiedades físico-químicas, tecnológicas y sensoriales de un producto de panadería,
bastones, que se consumen como snack. Se caracterizaron 5 variedades de este tipo de
bastones comerciales basados en harina de trigo, para los parámetros se analizó el
porcentaje de humedad y Fuerza máxima de corte. Se elaboraron bastones basados en 5
tipos de harinas libres de gluten (harina de maíz, arroz, trigo sarraceno y garbanzo) y se
seleccionaron las harinas de maíz y arroz por su mejor valoración sensorial (sabor). Se
fijó la formulación control a base de harina de trigo y se realizaron dos ensayos de
sustitución parcial de harina de trigo por harina de maíz y harina de arroz. El aumento del
contenido en harina de maíz provocó un aumento significativo de la Fuerza máxima de
corte de los bastones mientras que al sustituir la harina de trigo por la de arroz el efecto
fue el contrario. A partir de la valoración sensorial de las muestras se aprobaron los
bastones basados en harina de maíz y harina de arroz. Así se ajustaron las formulaciones
y parámetros de proceso para elaborar bastones de harina de maíz y harina de arroz y se
propuso el empleo de semillas para mejorar los productos desarrollados. Los bastones
desarrollados se caracterizaron para los parámetros de Fuerza máxima de corte,
porcentaje de humedad y color. Los bastones de harina de maíz y de arroz con semillas
fueron aprobados y calificados positivamente por un panel de 25 consumidores habituales

Gluten consists of two different protein fractions, gliadins and glutelins, which confer
cohesiveness and viscoelastic properties to the masses. The effect of the substitution of
wheat flour on the physical-chemical properties, technological and sensorial properties of
a bakery product –sticks which are consumed as snacks- are studied in this work. Five
varieties of this type of commercial sticks based on wheat flour were characterized based
on the percentage of humidity and the maximum cutting force. Sticks were made based
on 5 types of gluten-free flour (corn flour, rice, buckwheat and chickpea) and cornmeal
and rice flours were selected for their sensory evaluation (flavour). The wheat flour-based
control formulation was fixed, and two partial flour substitution tests were performed,
wheat flour for corn and rice flour. The increase in the corn flour content caused a
significant increase in the maximum cutting force of the sticks. On the other hand, the
effect was the opposite when wheat flour was replaced by rice flour. The sensory
evaluation of the samples showed that sticks which were based only on corn and wheat
flour could be accepted. Thus, the formulations and process parameters were adapted to
elaborate corn and wheat flour sticks. The use of seed was also proposed to improve the
developed products. The developed sticks were characterized for the parameters of
maximum cutting force, percentage of humidity and colour. The corn flour and rice seeds
sticks were approved and graded positively by a panel of 25 regular consumers of this
